Cook the ground turkey in a skillet until fully cooked and it reaches 165°F. Drain any excess liquid if needed.
Add the cooked turkey, black beans, diced tomatoes, chicken broth, chili powder, cumin, garlic powder and smoked paprika.
Stir everything together so the seasoning is evenly distributed.
Cook on LOW for 6–8 hours or HIGH for 3–4 hours. Give it a stir halfway through if you're around — if not, the Crock-Pot will survive without supervision.
Brown the ground turkey until fully cooked to 165°F, then let it cool completely.
Add the cooled turkey, black beans, diced tomatoes, chili powder, cumin, garlic powder and smoked paprika to a gallon-size freezer bag.
Leave the chicken broth out. You'll add it fresh on cooking day.
Remove as much air as possible, seal, label and lay flat. Freeze for up to 3 months.
Thaw completely in the refrigerator. Transfer everything to the slow cooker and add 1 cup chicken broth. Do not cook the meal from frozen.
+ 1 CUP CHICKEN BROTH
Your freezer meal should require fewer decisions,
not a scavenger hunt for the recipe.
Use ground chicken instead of turkey if that's what you already have.
Add a diced bell pepper for another vegetable.
Top with plain Greek yogurt instead of sour cream, or use whichever one you prefer.
Add 1/2 cup frozen corn during the last hour of cooking if you want a little extra sweetness and texture.
Taking care of everyone else gets a lot easier when you're not running on fumes. Having dinner ready isn't extravagant. It's one small way to make sure you're on your own list, too.
